Ratatouille is one of those delicious recipes you can endlessly vary with. This variant is definitely our favourite though.
Ingredients:
2 aubergines
2 zucchini
2 red bell peppers
1 big yellow onion
2 cloves of garlic
2 beefsteak tomatoes
200 grams sugar snaps
3 twigs rosemary
3 twigs thyme

Salt and pepper
Preheat the oven to 110 degrees Celsius (or 230 Fahrenheit). Clean the aubergines, bell peppers and onion and cut them in pieces. Next, lay them in a roasting tin. Afterwards clean the zucchini and remove, to taste, part of the peel (this makes the zucchini's taste less dominant). Clean the sugar snaps and place them in the roasting tin. Pick the herbs of the twigs and press the garlic, lay all the in the roasting tin and add salt and pepper to taste. Mix the whole. Pour Il Terzo Terra di Foggia over the mix. Place the roasting tin in the preheated oven and stir the mix twice during the baking process. After 30 minutes add the cut tomatoes and leave the mix in the oven for another 20 minutes. Stir the mix again halfway through.
