3 x Asparagus recipes

The classic asparagus are always a joy to eat. We admit it: some dishes are wonderful when prepared with butter. Would you like some variation with your asparagus? We have a few tasty recipes for you with this golden vegetable as main character. 

Asparagus with crispy ham and pecorino cheese: 
Ingredients for 4 persons:

20 white asparagus 
1 bunch of fresh sage
Olive Oil Every Day
4 slices prosciutto
Piece of pecorino cheese
4 eggs
Il Terzo olive oil 

Peel the asparagus 2 cm under the top part and cut of the chewy bottom (1-2 cm). Put them in a pan filled with cold water and some salt. Boil until cooked in approximately 12 minutes. Turn off the heat and let them rest in the pan with water.

Heat the Olive Oil Every Day in a frying pan and shortly fry the sage. After having done that, put them aside on a kitchen towel. Cook the eggs for 6 minutes and plunge them into cold water afterwards. Cut the ham into pieces and bake on a low heat in a dry frying pan until crispy. Meanwhile, grate the pecorino cheese into slices. Serve the asparagus with the ham, sage, egg, pecorino cheese and a nice sprout of Il Terzo olive oil. 

Pizza with asparagus

It almost sounds like something cruel, asparagus on a pizza. But it sure is delicious! For the dough of the pizza, follow this recipe. For the pizza with asparagus you will only need half of the ingredients for the sauce to make sure it is not overpowering. 

8 white asparagus
150 gr serrano ham
150 gr mozarella
75 gr parmesan cheese

Preheat the oven on 220°C. After having made the pizza dough and adding the sauce, the toppings can be added to the pizza. Cut of the bottom of the asparagus and cook the asparagus in approximately 6-7 minutes. Cut the asparagus in half (length wise) and place them on the pizza. Cut the mozarella into sliced and add to the pizza. Lastly, add the serrano ham and sprinkle the parmesan cheese. Bake the pizza in a preheated oven for 10 minutes and enjoy your delicious, fresh pizza.

Salad with asparagus, gorgonzola and pear 
A fresh salad with unexpected explosion of flavors. Ideal when you have left some broken asparagus, because those can be incorporated in your salad nicely. 

Ingredients for 4 persons: 
2 pears
10 green or white asparagus
300 gr corn salad
100 gr gorgonzola
2 tbsp Aceta Balsamico di Modena
Il Terzo olive oil

Peel the asparagus until 2 cm under the top part and work your way down to the tough bottom, which you also remove (1-2cm). Cut in pieces of approximately 5 cm. Fill a pan with cold water, add some salt and last but not least, the asparagus. Cook for 12 minutes until the asparagus are done. Turn off the fire and leave the asparagus in the pan filled with water.
Cut the pear into thin slices and the gorgonzola into pieces. Put corn salad in a large bowl. Add the asparagus, pear and gorgonzola. Lastly, pour the olive oil and aceto balsamico to your salad.
