Banana pancakes with coconut

Recipe for an exotic breakfast




These pancakes give your day a true kick start. Nice and sweet and quite easy. Be ware: the kids love it! So make plenty. 

Ingredients per person: 
1 ripe banana
2 eggs
1 tbsp coconut (grated)
1/2 tsp cinnamon
2 tbsp oat flakes
Maple syrup
Olive Oil Every Day

Preparation:
Mash the ripe banana (the riper the better) finely in a deep/ soup plate. Beat the 2 eggs and add to the banana with the grated coconut and cinnamon. Add the oat flakes. This can be ground, but is optional. Beat everything together until the mixture is smooth. 
Heat the Olive Oil Every Day in a frying pan on low heat. You can choose to make one big pancake or 3 small ones that you can pile up your plate. Bake the pan cakes brown on both sides, while covered. Afterwards, put them on a plate and pour over some maple syrup. Can be nicely served with blue berries and yoghurt.
