When you think of Halloween, you automatically think of pumpkins. Aren't you getting tired of pumpkins already? We have found an alternative with paprika! Prepare a delicious paprika sauce to combine with a freshly cooked pasta. Trick or treat!
Ingredients for 2 persons:
2 large red paprikas
1 clove of garlic
A hand full of pine nuts
Olive Oil Every Day
Parmesan cheese (for garnishing)
Salt and pepper
Wash the paprikas and hold them above the gas stove on a low fire. Meanwhile, roast the pine nuts. Wait until the paprikas turn black and keep turning them once in a while to make sure the darkening process happens equally. When the paprikas have turned black on each side, let them cool. Use your hands or paper towels to remove the black layer. Don't rinse the paprikas with water, this will make the smokey flavor fade. Cut the paprika into pieces and put them into a blender. Mix until the sauce is smooth.
Cook the pasta al dente. Chop the onion and garlic and fry in Olive Oil Every Day. Add the paprika sauce to the onion and garlic and let it stew on a low fire.
Depending on your taste, add salt and pepper. If you think the sauce is a little to thick, add a little bith of broth. Garnish with pine nuts and some Parmesan cheese.
