Nettle soup

Recipe with weeds



These weeds are a true ingredient in the kitchen. It's healthy and surprisingly good. Who would have thought this stinging plant would end up in your pan?! Ridder has made this soup and got nettle from the woods.

Ingredients for 4 persons (or a full pan):
1 onion (large)
3 cloves of garlic
Quite some nettle
3 vegetable stock cubes
1,5 L water
150 ml cream
(small) bunch of chives
Olive Oil Every Day
Pepper and salt

Preparation:
Pick the nettle, approximately 40 tops. Chop the onion and garlic finely and fry in a big pan in our Olive Oil Every Day. Meanwhile, prepare the stock. Chop the nettle finely. Pour cooking water over the nettles to stop them from stinging.
Add a nettle to the broth and let it cook for 20 minutes. Mix the vegetables with a hand blender. Lastly, add the cream and optional: some pepper and salt. Chop de chives finely. Serve the soup and add some chives. It is recommended to add a little rosemary olive oil for an aromatic smell and flavor.
