The other day, Ridder walked in the office with this apple cake. His girlfriend Roos has made this for us and it looked delicious. Nice and sweet because of the apple and it got its spicy from the rosemary. We were a fan. We were lucky she wanted to share her recipe with us.
175 gr flower
2 tsp baking soda
100 gr sugar
2 dl Olive Oil Every Day
1 knife tip of salt
Sprout of rosemary oil
Preheat the oven on 170°C. Grease the cake tin (size: 1L) with olive oil. Put the flower, baking soda and salt in a bowl and mix.
Peel the apples and cut into pieces. Wash the lemon thoroughly under the tab, grate off the skin and press until all the juice is extracted. Add juice, grated lemon skin and olive oil to the bowl and mix all ingredients until the batter is smooth. Add some more rosemary olive oil.
Scoop the batter in the cake tin, tap the counter to evade the cake from containing bubbles and place in the center of the oven.
Bake the cake in 60 minutes. Check if the cake is done by sticking a clean wooden skewer into the middle of the cake. When it comes out clean, the cake is done. Let the cake cool down a little before you remove the cake tin.
