Italian panini

This recipe is our intern Jari's favorite! With his Italian roots he cannot choose anything else than a recipe with Italian twist. He thinks everything tastes good on a panini, but this version with mozarella, tomato and pesto is the best.

The possibilities for making a panini are infinite. As a base, take a grilled panini sandwich and let your imagination do the work.

Ingredients for 4 persons:
4 panini sandwiches 
200 gr tomatoes
250 gr mozarella
50 gram Parmesan cheese
20 gr rocket
Pesto (follow the hyperlink for the kale pesto recipe)

Now the pesto is done, cut the sandwiches. Rub both sides of the sandwich with kale pesto (you shouldn't be too careful with that) and add tomato and mozarella. Lastly, add some parmesan cheese and rocket to your panini. 

And, let's bake! Preferably on a grill, but in the oven also works.
