Linguine with courgette and parmesan

Delicious with our lemon olive oil

This week, we are making a delicious pasta with courgette, mint, parmesan cheese and our Al Limone olive oil. This pasta has a rich flavour, is vegetarian and quick to prepare. And you only need 5 ingredients for this pasta.

- 300 g linguine
- 2 courgettes
- 30 g mint
- 60 g parmesan
- Al Limone olive oil
- Olive Oil Every Day

How to make it.
First bring a large pan of water to the boil, add a generous pinch of salt. Then cook the pasta according to the instructions on the packet.

In the meantime, thinly slice the courgette lengthwise and then cut it into strips with a sharp knife. Put a frying pan with 2 tablespoons of Olive Oil Every Day on the fire, add the courgette and keep stirring regularly for 4 minutes. In the meantime, finely chop the mint leaves and stir them into the courgette.

When the pasta is ready, drain it and collect a cup of the cooking liquid. 
Then muddle the pasta through the courgette, together with a dash of the cooking liquid. Then grate in most of the parmesan cheese. Stir the whole lot and season the pasta with salt, pepper and Al Limone olive oil.
Divide the pasta over the plates and finish off with a little parmesan and Al Limone.
