Spaghetti with spinach and salmon

Spaghetti with spinach and salmon

Cooking for the entire family is sometimes seen as a challenge. Especially next to working. This recipe is the absolute favorite of my kids Daan (4) and Joep (2). Actually I am a fan myself, because it’s healthy and prepared really quickly.

Ingredients for 4 persons:
600 gr baby spinach
400 gr spaghetti
2 cloves of garlic
1 red onion
100 gr cherry tomatoes
250 gr smoked salmon (shredded)
200 gr crème fraiche
Olive Oil Every Day
Al Limone olive oil

Fill a pan with water, put on the stove and bring to a boil. As soon as the water starts to cook, add the spaghetti. Finely chop the onion and garlic which you slightly fry in a little Olive Oil Every Day on medium fire. Meanwhile, coarsely slice the baby spinach (the children will love it). Cut the tomatoes in half. Start adding a hand full of spinach every few minutes and keep stirring until the spinach has shrunk. Add the tomatoes and crème fraiche to the pan and let it set for an instant. Turn off the heat and throw in the shredded salmon. Last but definitely not least, add a sprinkle of Al Limone olive oil to freshen up the dish. Buon appetito!
