Sometimes something delicious can be made with very simple and limited ingredients. Create an explosion of flavors with only 2 ingredients, namely mango and our chilli pepper olive oil. You can make this as starter or as side dish. Our Chief Olive Oil Officer has made this on the BBQ for his friends.
Use 1 mango per person. This exotic fruit has one large seed in the middle. Make sure you cut just around the seed. Cut slightly off the middle, to make a large slice. Do this for both sides of the mango. Leave on the skin. Cut the inside of the mango in cubes. When doing this, make sure you do not cut the skin. Now, pour the chilli pepper olive oil in the cuts with a little sea salt.
Heat the mango 15 minutes in a preheated oven (180°C) or on the BBQ until the yellow part starts to get slightly brown. Depending on if the mango is ripe or not, the cooking time might differ.
You can also make a delicious salsa with this mango. Get the yellow flesh and mix with one avocado and some coriander leaves. Sprinkle with some lime and combine with grilled fish, like a steak or dorado. Have a nice meal!
