In the south of Italy, the farmers there have a privilege that other Italian farmers do not. They are allowed to water their trees. Using an ingenious system of tubes, hoses and pipes, the careful watering is done from above and along the trunk of the tree. This minimises the amount of water lost through evaporation and ensures the olives, leaves and trees are not damaged.
A rather nice side benefit to this watering system is that it delivers a wet soil that is beloved of the local basil plants. Given the abundance of basil that grows beneath the olive trees, it didn't take long for our farmer, Maurizio, to put two and two together and make a bespoke basil oil for us.
As with all our oils, the olives in Al Basilico oil are hand picked and the basil leaves are then added during the pressing process. The oil mixes with the etheric oil of the basil plant to create a taste that is actually unique. Fabulous idea if you ask us.
