The Al Limone (250 ml) and Al Cipollotto olive oil (250 ml) are two fresh spring flavors.
Our spring onion olive oil or Al Cipollotto is made from our Ogliarola and Coratina olives and locally grown Puglia spring onion.
The Coratina is a small, fairly dry olive with a mild olive flavor that is complimented by the gently peppered Ogliarola. These olives make for an oil that is not too grassy and not too peppery, giving the spring onion aroma a real chance to be the star of the show.
Made from the essential oils of the best Sicilian lemons and our trusted Coratina olives, we are big fans of our Al Limone olive oil.
If you twist and squeeze fresh lemon skin, you will see oil spraying into the air. That essential oil is full of flavour and perfume. And that’s want we want to capture.
So to make sure none of it escapes, we squeeze the lemon peel cold with our olives to get that fresh citrus flavour.
The cold pressing technique separates the oil from the juice and the flesh of the fruit and since oil is hydrophobic (chemistry lingo for “afraid of water”), it cannot mix with the olive juices. However, it can mix with the olive oil. Which is exactly what we are looking for.
Al Limone adds a zesty kick to salads and is fab with fresh fish. The oil can bind too, making it great for creamy sauces.
