The Gargano National Park in Puglia is Italy at its finest. A region that postcard makers dream about, with its breathtaking high cliffs, white beaches and azure seas, it's no wonder the whole area is a protected nature reserve. And it's in this picture perfect reserve that one of our farmers, Michele, grows his olive trees. Due to wind pollination, the trees here are of many different varieties, growing criss-cross all over the land. While at first glance that may seem chaotic, it is the tradition here to combine and blend the qualities of the different olives into a natural olive oil packed with character. The olives in our Il Quinto Delicato are hand picked, cold pressed and unfiltered to create a cloudy oil, that is at it's best when cold and wonderful with game and poultry.
