The fun starts with shopping the ingredients. For this recipe it is important to choose quality over quantity. Go to the local butcher and tell them that you want to use the beef for a carpaccio.
Ingredients for 4 people:
500 grams of beef
salt and pepper
Olive oil Every Day
100 grams of arugula
good piece of Parmesan
Extra virgin olive oil with balsamic vinegar
Place the beef on a plate and sprinkle with Olive Oil Every Day and a little salt and pepper. Cover the meat with some foil and put it in the fridge for one hour. Heat a frying pan and add a splash of Olive oil Every Day. Fry the meat briefly and turn it over occasionally. Let it cool again.
Place the meat in the freezer for half an hour, then you can easily cut it into thin slices.
Clean the fennel and cut into very thin slices. Roast the pine nuts in a dry pan. Cut very thin slices of the Parmesan.
Cut the meat also into very thin slices with a slicer or a long knife. Place the meat slices on a flat dish. Add the vegetables, pine nuts, Parmesan and peppers. Sprinkle with a little sea salt. Then sprinkle with some extra virgin olive oil with balsamic vinegar. Serve it immediately.
Of course you can also vary with carpaccio. So you can use other sprouts in addition to arugula, such as coriander or radish leaves. And also add thin slices of apple or pear.
