Pasta Tartuffo

In this recipe we are using our truffle oil. The Al Tartufo is our truffle olive oil made from Coratina and Ogliarola olives and our secret natural truffle aroma recipe. 
For the truffle aroma, our grower, Maurizio, uses a secret 100% natural recipe made from fermented herbs, onions and the roots on which the truffles have grown. It’s all rather complicated but the result is an oil infused with a truly terrific truffle taste. 

Ingredients for 4 persons:
1 shallot
generous dash of truffle oil
400 grams of tagliatelle
200 grams of mushrooms
30 ml of white wine
80 grams of mascarpone
80 grams of Parmesan
Olive oil Every Day
 
Preparation method
Peel the shallot and cut it finely. Chop the mushrooms into large pieces. Fry the shallot and mushrooms in a warm frying pan with a dash of Olive oil Every Day. Deglaze with white wine. Let the mushrooms simmer on low heat for a few minutes. Add the mascarpone after 10 minutes and heat gently.
Cook the pasta al dente in another pan. Add the pasta with the grated Parmesan to the frying pan. Turn off the heat and add a dash of truffle oil.
